Application of sweet whey powder in manufacture of Sugarless Yoghurt

Russian Dairy Research Institute VNIMI made a scientific research checking if sweet whey powder can be used in production of Sugarless Yoghurt of following types (fat content):

  • cream with 10% fat content;
  • milk classical with 3,5% fat content;
  • milk half-skimmed with 1,5% fat content;
  • milkskimmed.

The results of investigations show that Sweet Whey Powder can be recommended for use in technological process of manufacture of Sugarless Yoghurt.
